Vegan Herbed Stuffing

You’ll be giving thanks to us after trying this delicious vegan herbed Germinal stuffing!

Eating healthy should never feel like a sacrifice, especially on Thanksgiving.

We used the Tomato and Basil Crackers because of their texture and earthy flavors.
The Tofu puree brings it all together and is an excellent source of protein. The fresh herbs, such as sage, blend perfectly with these tasty crackers.


IN THIS RECIPE:

Ingredients:

4-6 Servings

  • Prep time: 10 minutes
  • Cook time: 35 minutes
  • Ready in: 45 minutes

4  tablespoons organic coconut oil
1 medium onion, diced
2 organic celery stalks, diced
1 cup organic mushroom, finely diced
1/8 cup fresh sage, chopped
1/3 cup fresh parsley, chopped
1 tablespoon fresh thyme leaves
2 packages organic Germinal Tomato & Basil Crackers
1/2 cup pureed tofu
1 cup organic vegetable broth

You can’t go wrong using any of the Germinal crackers for this recipe. The rosemary, and chickpea and rice flavors would both be great substitutes that would add a different type of flavor to this delicious recipe.

Serve this delicious Germinal herb thanksgiving stuffing with your favorite vegan gravy on Thanksgiving day.

Directions:

Step 1:
Preheat the oven to 350 degrees Fahrenheit

Step 2:
In a sauté pan, melt coconut oil over medium-high heat.
Add onions, celery, and mushrooms until vegetables are soft and caramelized (about 6 minutes).
Add sage, parsley, thyme and set aside.

Step 3:
In a large bowl, add Germinal crackers, vegetable broth and tofu puree.
With a wooden spoon, fold and break up the crackers.

Step 4:
Add in the caramelized vegetable mixture.
Taste and season with salt and freshly ground pepper.
Add more broth if needed, the mixture should be moist.

Step 5:
Transfer stuffing mixture to an ovenproof pan and bake for 30 minutes, or until stuffing is heated and golden on top.
Once ready, set aside to cool then serve.
