These deliciously crunchy coconut shrimp are perfect for any occasion. Step 1:
Process the Germinal Organic Chickpea & Rice Crackers in a food processor till fine.
Step 2:
In a bowl, mix the Germinal Organic Chickpea & Rice Crackers flour with shredded coconut.
Step 3:
Prepare the eggs mixture by mixing eggs and coconut milk in a bowl.
Step 4:
Dip each shrimp in coconut flour, then the egg mixture, shake off any excess then press shrimp in Germinal Organic Chickpea & Rice Crackers coconut mixture.
Step 5:
Once all shrimp are coated. Add coconut oil to a large skillet on medium high heat then cook the shrimp for about 2 minutes on each side or until it’s cooked through.

Tips:
