Gluten-Free Zucchini Fries

Try these baked, garlic-y zucchini fries with freshly grated Parmesan cheese. They are ultra flavorful and 100% gluten-free, breaded with our Tomato Basil Cracker crumbs for crunch!

Ingredients:

  • Prep time: 15 minutes 
  • Cook time:  35 minutes

Ingredients:

  • 5 oz Zucchini 
  • 1 cup of Germinal Organic Tomato Basil Cracker crumbs 
  • ½ cup  grated parmesan cheese
  • 1 tablespoon garlic powder
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 large eggs
  • 1 cup all-purpose gluten-free flour 

Directions:

Steps:

  1. Preheat oven to 425°F (220°C).
  2. Cut zucchini into fries and set aside.
  3. In a large bowl combine cracker crumbs, parmesan, garlic powder, basil, salt, and pepper.
  4. Whisk eggs in a shallow bowl or dish.
  5. Add the flour to another bowl.
  6. Coat each vegetable in the flour, tapping off any excess.
  7. Then dip vegetables in eggs, coating evenly, and then toss in cracker crumb mixture.
  8. Place on a baking sheet lined with parchment paper. Bake for 15-20 minutes, flipping halfway.
